OPG Kalcina is a family farm specialising in producing extra virgin olive oil, located in a small town near Grožnjan, with 1500 olive trees. Surrounded by hilly relief, the olive grove enjoys an ideal microclimate that enables the flow of salty air from the sea and the retention of that air due to the hills behind the olive grove. In this way, everything is best preserved in the olive grove; thus, the olives have a high-quality aroma and polyphenols. Great importance is played by the Mediterranean climate, especially the microclimate, which enables the flow of salty air from the sea—the cultivation of varieties that are typical for Istria. Ever since the grandfather laid the foundation stone, the family has diligently and patiently developed the olive oil production business and set it to the current enviable level.

The quality of the oil produced by the Moraiolo olive is excellent. However, in order for the oil to be of top quality, the fruit must be harvested when it is semi-green in color. Its taste is balanced with pleasant bitterness and spiciness. Top chefs recommend adding it to dishes such as boiled vegetables, cream soups, baked fish and mature cheeses.
